1 teaspoon of dry yeast
250 grams of high-gluten flour
1/2 teaspoon of salt (for the dough)
15 grams of low-gluten flour
2 eggs
20 grams of butter, softened at room temperature
50 grams of scallions, chopped
10 grams of oil
1/2 teaspoon of salt (for the scallion oil)
Steps to Make Taiwan Green Onion Bread:
Place water, milk, fine sugar, and dry yeast in the main bowl. Heat at 37°C for 3 minutes at speed 1.
Add high-gluten flour, 1/2 teaspoon of salt, low-gluten flour, and 1 egg. Knead the dough for 2 minutes. Remove the dough, divide it into 4 equal portions, and set aside.
Place the small dough portions and butter in the main bowl. Knead for 3 minutes. Remove the dough, place it in a large bowl, shape it into a round ball, cover it with plastic wrap, and let it ferment in a warm place until it doubles in size (about 1 hour).
