  • 500g starchy potato, peeled and quartered

  • 2 medium eggs

  • 125g olive oil

  • 1.5 tsp salt

  • 500g ~600g tapioca starch

  • 100g almond meal or almond flour


Instructions


  1. Boil the potato for 25-30 minutes. Drain well. Can prepare this one day before and put in the fridge to absorb the moisture.

  2. Add potato to TM bowl with egg, olive oil and salt. 30 sec speed 8

  3. Transfer 2 into a large mixing bowl. Add tapioca and almond meal. Mix with a spatula or by hand.

  4. Divide the dough into 12 pieces roll into ball shape. Then use rolling pin to roll the ball into 25 cm diameter circle.

  5. Fry the wrap over a non stick pan with or without oil. Each side 30 second.
